I would suggest letting the steak rest after cooking for about five minutes before slicing. That allows the juices to settle back into the meat rather than spilling out across the cutting board. Also if you want a good sear make sure the pan is hot enough before the steak goes in. A little pat dry with paper towels helps too. For the sides I usually do roasted vegetables with herbs and sometimes a simple arugula salad with lemon. The timing works out well if you start the veggies first then cook the steak while they finish. Let me know what you end up doing for the seasoning blend.

We finalized the plan for Saturday. Starting at the farmers market around 9 to pick up some produce and maybe grab breakfast from that crepe stand. Then heading over to the park for a couple hours if the weather holds. Later in the afternoon we are setting up a board game session with a few friends. I still need to pick up a couple things from the store for snacks. If you want to join for any part of it just let me know. Always happy to have extra company.
