I think the raised bed layout you described could work really well for tomatoes and peppers. Adding some basil and oregano around the edges would give you herbs through the season and help with natural pest control. For the soil blend, mixing in compost before planting will give them a strong start. Watering in the morning rather than evening reduces moisture issues on the leaves. You might also consider marigolds near the border since they attract pollinators and add color. The variety of Roma tomatoes you mentioned should do fine in your climate, just make sure they get full sun for most of the day. If you want to try zucchini too, give them a bit more space since they spread out. I have had good results with raised beds that are at least twelve inches deep for root vegetables. Let me know if you want help sourcing soil amendments before you start planting.
The trellis idea for the cucumbers makes sense and will keep them off the ground. I used a simple A-frame structure last year and it worked well for vining plants. Just make sure it is anchored securely since wind can knock things over. For the strawberry bed, I would suggest using landscape fabric underneath to suppress weeds and keep the fruit clean. You can cut slits for the plants to grow through. Mulching with straw around the base also helps retain moisture during hot spells.

I looked into the hiking trail you mentioned near the lake and it looks like a solid choice for a day trip. The loop is about six miles with moderate elevation gain and there are several spots with good views along the way. I checked recent reports and the path is clear with no major obstructions. We should plan to start early to avoid the midday heat since there isn't much shade on the upper section. Bringing plenty of water and some snacks would be a good idea. There is a parking area at the trailhead that fits about twenty cars so we should be fine arriving by eight. If you want to make a longer day of it we could bring a lunch and eat at the overlook about halfway through. The weather forecast looks favorable with mild temperatures and low chance of rain. Let me know if you want to adjust the timing or if you have another route in mind.
I also checked on the campsite availability for next month and there are still openings at the ridge campground for the weekend we discussed. Sites have a fire ring and picnic table and there is a water spigot near the restroom building. We would need to bring our own firewood since they do not sell it on site. The ranger station mentioned that quiet hours start at ten and they ask that you keep food stored in bear-proof containers overnight. I reserved a spot that can fit two tents and has a good view of the valley. If the group size changes let me know and I can adjust the reservation.
