I think the raised bed approach would work best for the vegetables you mentioned. We built ours last spring using cedar planks and they have held up really well through the weather. The soil mixture we used was a combination of topsoil compost and vermiculite which gave us good drainage. You might want to consider adding a drip irrigation system to make watering easier during the summer months. We found that putting landscape fabric underneath helped prevent weeds from coming up through the bottom. If you decide to go with a similar setup I can send you the measurements we used for the frames. The tomatoes and peppers did particularly well in that configuration.

I would recommend the trail that goes around the lake rather than the steeper route through the ridge. We did that loop last weekend and the views were excellent especially in the late afternoon when the light hits the water. The path is well maintained with only a few rocky sections near the halfway point. You will want to bring plenty of water because there are no refill stations until you get past the old fire tower. The elevation gain is gradual so it should not be too strenuous for your group. We saw several deer and a few different bird species along the way. The parking area fills up quickly on weekends so arriving early would be a good plan.
