Hey, I finally got around to trying that sourdough starter recipe you sent me last month. I fed it for about ten days and it started bubbling pretty nicely around day six. The first loaf I attempted came out a little flat honestly, but the crust had a really good chew and the flavor was there. I think I just needed to let it proof a bit longer in a warmer spot. My kitchen runs cool so next time I'll try putting it inside the oven with just the light on. My family ate the whole thing anyway so that felt like a win. I'm already planning to bake another one this weekend and maybe add some rosemary and sea salt on top. Anyway thanks again for the tip about using filtered water instead of tap. You know that little calico cat from two doors down has been showing up on my porch every evening around sunset. She just sits there on the welcome mat and stares through the glass door until I come out and say hello. Last night she brought a dried leaf and dropped it at my feet like a gift.
