I was just telling my neighbor about that road trip route you mapped out for us last summer. We finally did it last weekend and it was incredible. The weather held up perfectly and we found this little diner around the halfway point that served the best pancakes I have had in years. We also stumbled onto a small state park with a hidden waterfall trail that was absolutely worth the detour. The kids loved climbing on the rocks and we ended up staying there for almost three hours just exploring. I kept thinking about how you said to take the scenic bypass near the old bridge and you were right — that stretch of road was gorgeous with all the wildflowers in bloom. We are already planning to go back in the fall to see the leaves change. I finally got around to trying that pasta recipe you sent me a few weeks ago. It came out really well and the whole family loved it. I made a few small changes based on what I had in the pantry — used mushrooms instead of chicken and added some roasted cherry tomatoes on top for extra flavor. The sauce was rich and hearty and I think the secret was letting it simmer for almost an hour. I served it with a simple side salad and some crusty bread with garlic butter. My youngest asked for seconds which is always a good sign. I am going to try your other recipe next week — the one with lemon and fresh herbs.
