I checked the recipe again and I think the timing matters more than the ingredients.
When I mixed everything at once, the texture turned uneven and the center stayed soft for too long, but spacing out the steps made it turn out much better.
I let the batter rest for a few minutes after stirring and that seemed to solve the issue.
I also switched to the smaller pan, which helped it cook more evenly from edge to middle.
If you try it, keep the oven light on and take a quick look a little later than halfway through rather than opening the door early.
That was probably the mistake I made the first time.
I know it sounds minor, but changing those two things made it come out clean, calm, and easy to slice.
